Brugan at The Wokalup is an independent brewery that focuses on having beer brewed from the best and local ingredients. Their paddock to plate dining experience offers exceptional and complimentary foods to go with their on site brewed beers.
Located on South Western Highway, 3 minutes South of Harvey and only 15 minutes from Forrest Highway, Brugan at The Wokalup is a brand new Brewery offering paddock to plate meals with a selection of their own in house lagers, IPAs and more.
Arcus started working with the owners Megan and Bruce in 2017 as they made their way through the red tape that comes with with expanding a 120 year old building. The goal was a kitchen that could serve the best local produce and a bar to showcase their custom beers.
In the kitchen we went with the ever popular Blue Seal cooking line up inclusive of their solid fuel grill, ideal for those perfect cuts of local Harvey beef. To compliment the Blue Seal equipment and to give that extra spark to the menu a Convotherm Combi Oven with integrated smoker rounded out the cooking line up.
In the bar and kitchen we went with the Skope Back Bar x for those dinks not on tap and Skope Pegasus series for their chefs/prep fridge and Washtech dishwashers and glass washers.
Brand and product selection is always important, but more so when you are a country venue as you need to ensure a good level of service and back up for those inevitable breakdowns and not all suppliers offer that.
The stainless in the project was a combination of Simply Stainless in the back of house with our own Arcus custom stainless in all customer facing areas.
A cool room, freezer room and keg room rounded out the work, all Arcus custom with remote refrigeration located up in the plant room.
The beer system is from Lancer and whilst it wasn’t part of the Arcus contract it was designed an installed by Paul Newing who of course now works in house for Arcus.
