Perth’s first multi level dining and bar precinct, opened in the spring of 2012. The venue pays homage to its heritage-listed history, the old Newspaper House on St Georges Terrace. The venue boasts four levels of culinary and refined drinking options for every moment.
Key aspects of the historical building have been utilised including the internal atrium. Almost unfolding like a book, each level becomes a chapter, representative of the building’s printing origins creating a unique experience for everyone.
By utilising our in house expertise in refrigeration, our full time drafting department and our own site installers, Arcus were able to design, construct and install a refrigeration system that covered 5 floors of a heritage listed building.
Running off a Central Rack Refrigeration Unit located on the roof, the install included a Central Monitoring System that offers continuous in house monitoring of all their refrigeration, which helps them with their HACCP compliance. We also provided an offsite monitoring solution, monitored by our in house Service Department; this means we can often react before an issue becomes a problem thus avoiding potential product loss.
In terms of refrigerated units, the systme include such things as;
- Kitchen Island units with both doors and drawers.
- Food prep chillers that offered instant access to ingredients.
- Cool rooms for all the food, drink and even the rubbish.
- Pastry display fridges.
- Cheese display cabinet.
- Open front chillers for drinks.
- A Cool room with a glass viewing window to show the aging meat.
- We even refrigerated a glass walled wine cellar so the impressive selection could be in full view of the diners.
At the time of contact, Bethesda washed all their pots, pans and cooking trays by hand and needed a solution to make things easier and save some time.
Arcus discussed several options with the team at Bethesda and we ultimately came to a solution that included Custom Arcus Bench work, Condensate Hood and a Washtech AL8 Dishwasher. This solution meant we were able to offer a large sink bowl on the entrance bench which gave them the option to soak any larger items if need. We also had to tie in to existing benching, so by making the 45 degree angle on the corner of the exit bench we could achieve this without giving the workers around the tight kitchen a 90 degree corner to bump into.
All site bench work was carried out by our own in house team and our in house projects team made all the arrangements for sub contractors to attend site to install and commission the dishwasher and give the kitchen team a thorough run through on the operation of the machine.
The 80 seater Café Rous is conveniently located in the Rous Head Industrial Park on land reclaimed as part of the 2010 harbor deepening. Open daily to the Café feeds the local workers and the truckies coming to and from the port.
By utilising the expertise we have here at Arcus we designed and built a custom coolroom with integral freezer room for the kitchen along with a 7 glass door coolroom for storage, display and service of their cool drinks in the café.
Front of house we used solutions from both Cossiga and Roband to ensure the food was displayed appropriately for the incoming customers where they can help themselves to some items and be served others.
In the kitchen we used a combination of Waldorf, Pitco, Convotherm, Friginox, Berjaya and Washtec to offer them excellent equipment that will service them for years to come. Custom canopies and modular Simply Stainless Benching combined with Arcus custom benching completed the job.
Café Rous is another example of our “One Call, Does It All” solution.
Situated in the Mezz Shopping Precinct, The Peasant’s Table is all about the local community. They are the place where everyone is welcome. Whether you want a quick early dinner on your way home after work or perhaps a takeaway meal for a night in. Maybe you’re meeting friends for a meal and celebrations on the weekend or perhaps a late lazy Sunday Brunch.
Guests can enjoy seating inside their newly created rustic, urban environment, on their alfresco deck or olive grove set amongst the newly developed laneway and surrounded by fresh herbs and leafy gardens.
The Arcus Solution.
Using our “One Call Does It All” solution, Arcus were able to offer The Peasants Table the whole solution including Kitchen Equipment, Refrigeration and Stainless Steel Solutions.
With a mix of high quality brands in the kitchen, including an Arcus Cool Room, Skope Food Prep Chillers, Waldorf, Turbofan, Lincoln and Pitco Cooking Equipment along with Washtech and Culinaire Wash Solutions they are able to offer high quality food using the best local ingredients. Custom benching and Stainless wall cladding completed the kitchen.
Outside of the kitchen we manufactured and installed a custom irregular shaped coolroom, a custom 8 glass door drinks display fridge behind the bar and a custom bar including sinks, ice wells, speed wells and plenty of glass storage.
