The project at the last drop included the manufacture of the refrigerated cabinets throughout the venue, (refrigeration system by others), this included a Pizza Prep Station, Chefs Fridge, Under Counter Kitchen Chillers and the Back Bar Chiller.
Also involved was the design, manufacture and install of custom stainless throughout the bar and the kitchen and the supply of all the Warewashing and Cooking Equipment.
Brands utilised in the job were Blueseal Sapien Combi Oven, Blueseal Cooking Equipment, Washtech Dishwashers and Turbochef Pizza Ovens.
Our role on this job was the supply and installation of equipment, stainless and cool rooms for the Food Technology Room a John Wallaston School.
Waldorf and Washtech equipment perfectly complimented the combination of Custom and off the shelf Stainless Steel items.
Long term client Ausco Modular approached Arcus to supply and install the necessary equipment and stainless items for the Food Tech Lab and the Canteen.
A combination of Goldstein, Skope and Washtech equipment perfectly complimented the custom Arcus benching throughout the two rooms.
The real challenge on this job was effectively ducting 3 canopies through some very tricky and tight spaces, a job that was made easier by the fact that we use our own tradesmen installing items designed and built in our own factory.
Due to a significant expansion of the hospital, there was a need to increase the production ability of the existing kitchen on site.
The brief was to increase capacity whilst doing all the work in a kitchen that still had to feed over 300 beds three times a day.
The solution was to provide additional Waldorf Bratt Pans, 2 x 150 litre Tilting Joni Kettles and a new Fyer, these items were all cantilevered from their existing spine wall on a custom Arcus frame leaving clean lines and ensuing ease of use and cleaning.
The project also included the supply and installation of a new 40 tray Rational Combi Oven and various bits of Stainless Steel, both custom and off the shelf.
Finally a custom fridge was designed and installed to fit into two existing alcoves in the kitchen. These units were designed to take full size GN trolleys rolled straight in and are located next to their plating belt giving them easy access to the chilled food during service. This chiller was remotely chilled using a motor located in a nearby courtyard.
Matisse Beach Club was a full fit out by Arcus. Our scope of works was the complete install of all the Refrigeration, Stainless Steel throughout the bar and kitchen and the supply of all the cooking and ware washing equipment.

A Simple Waldorf line up not only keeps the on show kitchen neat and tidy, it also offeres excellent equipment. Skope refrigeration and an Arcus designed, manufactured and installed canopy along with Arcus Stainless Steel wall cladding complete this small but perfectly formed job.
